This dish is wonderfully delicious and healthy. Without added sugar, it is perfectly sweet and makes a satisfying dessert. The blueberry sauce sets nicely in the fridge and the deep purple color of the sauce makes the dish look very beautiful. It also makes a lovely breakfast with some crunchy granola. It makes 5-6 servings.

For apple fool:

3 lb gala apples, cored, peeled and chopped
3 tsp cinnamon
3 TBS water
1 1/2 plain yogurt.

For the blueberry sauce:

2 c frozen or fresh blueberries

Add apples and water to a saucepan and cook for 7 minutes on medium-high heat with the lid on.

Reduced heat and cook another 10 minutes with or until apples turn to coarse apple sauce consistency with occasional stirring.

Add cinnamon and stir well.

Let cool completely and then mix with yogurt thoroughly.

Transfer apple fool into individual dessert bowls.

To make blueberry sauce:

Reserve some blueberries for garnish.

Put the rest of blueberries in a microwavable dish and microwave for 1-3 minutes until blueberries are soft and bursting.

Purée the sauce with a handheld mixer or in a food processor.

Pour the sauce on top of apple fool in small dessert bowls.

Chill in the fridge for at least 30 minutes.
