This soup has a lovely flavor of miso. It is a perfect soup to eat in the winter evening. Makes 8 servings.
1 medium Onion,
3 medium carrots,
3 stalks of celery
Firm tofu, 1 blocks
2 medium chicken breasts or 1 lb of chicken tenders
5 cups of water
2 TBS Miso paste
8 oz mushrooms,
1 medium zucchini
1 ½ cups green beans
½ tsp Black pepper
3 TBS Canola oil
Sauté onion, carrot, and celery with canola oil for a few minutes until they are slightly soft.
Add miso paste, chicken, tofu and water.
Boil until chicken is done and then add green beans and mushrooms.
When green beans are mostly cooked, add zucchini and black pepper.
Boil at medium heat until zucchini is nicely done.
