This bread is simple to make and is delicious made with fresh tomatoes.
3 cups all-purpose flour
3 cups white whole wheat flour
2 1/4 cups cold water
1/2 tsp salt
1 3/4 tsp dried yeast
1 cup cherry tomatoes, quartered
1/4 cup olive oil
2 Tbsp dried Italian herbs.
Mix together the cold water, flours, salt, and dried yeast until combined well. No need to knead the dough, just place in the refrigerator overnight. Mix dried herbs with olive oil and leave overnight.
Cover the base of a baking sheet with baking parchment and oil well. Empty dough onto the baking parchment, and gently spread out the dough with your fingers to cover the entire area of the baking sheet. Press the tomato quarters into the dough, and drizzle over the olive oil-herb mixture. Allow rising in a warm place for about 1 hour. When the dough has risen, press the tomatoes down into the dough before baking at 450F for 20 minutes, turning the baking sheet halfway through.
